These little cups of deliciousness are fantastic!! I love to make them whenever I have my bible study ladies over, or when company comes. They are a fun, fancy, frugal way to eat breakfast!
Start with this basic biscuit dough. (You can used canned biscuits if you are in a hurry.)
Here is what you will need for the stuffing:
1 12 ounce package of breakfast sausage
10 eggs
4-6 ounces shredded cheese
Make your biscuit dough and roll it out.
Cut the dough into squares. This will make it easier to roll them big enough to put in the muffin cups.
Form your dough and put some in each muffin cup. Use your hand to press it gently into the cups. If a hole forms, just pinch it back together.
After you brown the sausage, crack the eggs over it and mix them in. Cook on medium heat.
When the eggs are mostly cooked but still kind of slimy, turn off the heat! You are going to cook these again and don’t want the eggs to get too dry.
Sprinkle the cheese on top and stir it in to the egg and sausage mixture. Then scoop into the muffins. (I use an ice cream scoop….perfect size!)
Bake on 350 for 10-12 minutes and ENJOY!!
