Spiced Candied Nuts…. In the microwave

I love sugary coated nuts.  I know that it diminishes the nutritional value of them, but I just can’t help myself!  I have been making them for years and a couple of years ago a friend shared her recipe for them….in the microwave!  Oh yeah, I was SOLD!  No more turning the nuts every 10 minutes for 2 hours.


This is a small batch, when I am having guests over I triple it.


1 cup pecans (Or any nut you choose!)

1/3 packed brown sugar

1/2 tsp salt

1/2 tsp cinnamon

1/2 tsp all spice

1/8 tsp nutmeg

1/8 tsp ground cloves

1 Tablespoon water

1 medium egg white, beaten (I normally only use half of it!)


Stir together everything but the nuts.


Microwave on HIGH for one minute.


While it’s cooking I butter a plate for the nuts to sit on. (You could use parchment paper instead, but I was out.)

20131231-221946.jpgIt might look like the egg has cooked too much, just stir it up until it gets smooth again.

Stir until the nuts are completely coated.


20131231-222037.jpgMicrowave on high for 3 minutes. Break up any big pieces and set out on your plate to cool.

Now…..just try NOT to eat them all. 🙂
