Homemade Lasagna

I have been building up to this for days!  I decided to venture into cheese making and made some mozzarella and ricotta cheese.  Once I knew photo(47)I was going to make lasagna, I wanted to do all of it from scratch.  So…short of raising the cow I did it!  It was super fun and TASTY!!

Here is what you need:

12  ounces mozzarella cheese

8 ounces ricotta cheese

9 strips lasagna noodles

1 pound hamburger meat, browned (You could use sausage if you prefer.)

26 ounces pasta sauce

1 teaspoon salt

photo(42)

Dump your meat, pasta sauce, ricotta cheese and salt into a bowl and mix well.

photo(43)

Use about 1/4 cup of your sauce and spread on the bottom of your pan.  Then, lay three noodles across the bottom. (I used fresh pasta and did not cook them ahead of time.  If you are using packaged lasagna noodles you don’t need to boil them, but add about 1/3 of a cup of water to your mixture.)

photo(44)

Use about 1/3 of your mixture and spread evenly over your pasta noodles.  Repeat this two more times until you have three layers of lasagna in the pan.

photo(45)

Spread your mozzarella cheese evenly over the top.  Since I used my homemade mozzarella cheese, I just sliced it rather than grate it.  I wanted to get good tasty chunks of cheese!!!

Bake on 350 for 30-40 minutes.

This is fantastic with some cheesy garlic bread!!!  ENJOY 🙂

Homemade Pasta Sauce

Spaghetti, lasagna, ravioli…..all of these things end up on the family menu regularly.    A few months ago I went to make dinner and didn’t have a jar of spaghetti sauce in the pantry.  So, I decided to experiment and made my own.  I have tweaked it a few times and landed on this recipe.  Delicious!  It only takes about 5 minutes to throw it together and I always have the ingredients on hand!  (I have been growing a tomato garden this year and I can not wait to make this with my fresh tomatoes!!!!)

Here is what you need:

1    6 ounce can of tomato paste

2   8 ounce cans of tomato sauce

4-6 ounces of water (Depending on what you are making.  Lasagna needs a wetter sauce)

2 teaspoons of Italian seasoning

2 garlic cloves, peeled

1 tablespoon Onion Powder (You can substitute for chopped onion!)

1 teaspoon Pepper

1 tablespoon Oil

photo(37)

Dump your tomatoes, water, garlic, and Italian seasoning into food processor or blender.

photo(38)

Pulse until well mixed.

photo(39)Dump into a saucepan and add your pepper, onion powder and oil.  Mix well and simmer for 10-15 minutes.

Wha…..Lah!  Delicious sauce for all your favorite pasta dishes.

Homemade Lasagna Noodles

After my adventure into making mozzarella and ricotta cheese I decided to go ALL IN!

If I was going to make the cheese then I might as well make the pasta sauce and the pasta…….right?  After a little searching I wound up modifying a recipe from Mother Thyme.  She has some great recipes, so check her out!!

Here is what you will need:

3 3/4 cups flour

5 eggs

3/4 teaspoon of salt

5 Tablespoons water

photo(36)

Dump all the ingredients into a food processor.

photo(35)

Pulse until the dough forms.

photo(41)Roll out the dough on a floured surface and cut into slices.  Roll them thin, you should be able to get enough from this recipe to make three layers in your lasagna.  You can use immediately, lay it out to dry, or even freeze it!  If you let it dry, make sure that it is completely dry before storing it.  It will be brittle so be careful.  If you freeze it, put your strips between layers of parchment paper and lay flat.  It will last in the freezer for 2 months.

ENJOY!!!
